Graham Crackers, crushed, plain or chocolate, 1 1/4 cup
Ricotta Cheese, part skim milk, 2 cup
Cream Cheese, Fat Free, 4 oz
Cocoa powder, unsweetened, 1/2 cup
Flour, white, 3 tbsp
Splenda, 1/2 cup
Egg white, fresh, 1 large
Vanilla Extract, 1 tbsp
Semisweet chocolate, 2 tbsp mini chips
Spray 8" spring form pan with nonstick cooking spray.
Sprinkle Graham Cracker crumbs evenly over bottom of pan.
Blend together the Ricotta cheese, Cream Cheese, Splenda, Cocoa, Egg White, Flour and Vanilla.
Mix in Chocolate Chips (or sprinkle Chocolate Chips over top once mixture is in pan).
Pour cheese mixture over crumbs.
Bake until knife inserted in centre comes out clean (approx. 1 1/2 hours).
Cool completely, refrigerate, cover and chill at least 3 hours.
8 slices = 192 cals
12 slices = 128 cals
