Amy's Creamy Fat-Free Mashed Potatoes

Introduction

These mashed potatoes are extremely creamy and rich. If I hadn't cooked them myself, I would never know they were fat free! These mashed potatoes are extremely creamy and rich. If I hadn't cooked them myself, I would never know they were fat free!
Number of Servings: 10

Ingredients

    5 cups large diced Yukon gold potatoes (use this kind if you can because they are extra creamy)
    1 small onion, diced fine
    cooking spray (small amount)
    1/2 cup fat free sour cream
    1/2 cup evaporated skim milk
    1 tsp garlic powder
    1 tsp salt
    1/4 tsp black pepper, or to taste

Directions

Boil potatoes until tender. Drain potatoes and set aside. In saucepan, spray a very small amount of cooking spray. Sauté diced onion in pan until onions are tender. Add salt, pepper & garlic powder. In a separate bowl or large mug, combine fat free sour cream & evaporated skim milk. Pour milk mixture onto onions. Heat milk & onion mixture, but do not allow it to boil. If saucepan is large enough, add drained potatoes to milk mixture (or combine in a large bowl). Mash potatoes with a hand-held potato masher (or large fork) until creamy and most lumps are removed. (DO NOT mash/whip with a food processor.) To get the potatoes very smooth, finish off with a whisk, if desired.

Makes 10 half-cup servings.
