Low Fat & Low Carb Frozen Yogurt

Introduction

A nice, creamy frozen yogurt. Tastes great - even my anti-artificial sweeteners husband likes it! It gets too hard to scoop if I save leftovers in my freezer, but I freeze it in an ice cube tray (silicone baking cups would be excellent, too) and it makes a great, quick base for a fruit and yogurt smoothie! Ingredients

    1 tsp vanilla extract
    2 1/4 cup 1% milk
    1/4 cup sugar
    1/4 cup granulated splenda
    1 envelope plain gelatin
    1/8 tsp salt
    1 1/5 cup Dannon Light & Fit Vanilla or Plain Yogurt (2 - 6 oz. cups)
    1/4 cup Karo Lite Corn Syrup

Directions

Combine the milk, sugar, gelatin, and salt. Let stand 1 minute. Cook over low heat for 5 minutes or until the gelatin dissolves. Let the mixture cool completely. Stir in the vanilla extract, yogurt, and corn syrup. Pour into a bowl; cover and chill for 8 hours. Pour into an ice cream machine and freeze according to manufacturer's instructions.
