Cheesy Mexican Chicken

Introduction

I love this Cheesy Mexican flovored dish. It is best served over rice (not included in caloric totals). You can substitute Chili powder for taco powder for a slightly different flavor. Number of Servings: 4

Ingredients

    4 Chicken Tenderloins
    2 Tbs. Taco seasoning or Chili Powder
    1/2 cup 98% fat free Cream of Chicken soup (condensed)
    1 cup 2% shredded cheddar cheese

Directions

Season chicken tenderloins to taste with onion powder, salt and pepper. Place tenderloins in a non stick skillet and cook through completely. I only use a non stick cooking spray for the pan - no oil or butter. Once the chicken is cooked through add 1/2 cup 98% fat free cream of chicken soup (cream of mushroom can be substitued). Heat through for a few minutes until soup gets less thick. Add 2 tbs of taco seasoning or chili powder. (Adding a small amount more will not significantly change the calories if you like a stronger flavor) Let chicken simmer in the sauce about 10 minutes. Top with 1 cup 2% shredded cheddar cheese. Reduce heat to low or warm and cover. When cheese is melted remove from heat.
