Overnight Breaksfast Bars

Ingredients

    Bars:
    1 1/4 cups all-purpose flour
    1 1/2 cups old-fashioned oats
    1 teaspoon baking powder
    1 tablespoon baking soda
    1/4 teaspoon salt
    2 teaspoons ground cinnamon
    1 cup granulated sugar
    1/2 cup packed brown sugar
    2/3 cup butter, softened
    2 eggs
    1 1/3 cups buttermilk
    1 medium apple, peeled, cored and
    chopped

    Topping:
    1/2 cup packed brown sugar
    1 teaspoon ground cinnamon

Directions

1. Grease a 13-by-9 inch backing dish.
2. To prepare bars, combine flour, oats, baking powder, baking soda, salt and cinnamon in a medium bowl; set aside.
3. Combine granulated sugar, brown sugar and butter in a large bowl. beat with a mixer at low speed until just blended. Increase speed to high and beat well. Blend in eggs and buttermilk. Decrease speed to low and gradually add flour mixture, beating until just blended and scraping sides of bowl. Bold in apples. Pour into pan.
4. To prepare topping, combine brown sugar and cinnamon; mix well. Sprinkle evenly over batter. Cover with plastic wrap and refrigerate overnight.
5. Preheat oven to 350F.
6. Uncover pan and let stand for 30 minutes. Bake 45 minutes, or until a wooden toothpick inserted in the center comes out clean. Serve warm. Serves 16.
