Fish Pockets

Ingredients

    1 T Olive oil
    1 cup sliced zucchini
    1 cup sliced carrots
    1 cup sliced summer (yellow) squash
    1 cup sliced red peppers, orange peppers, yellow peppers
    1/2 cup sliced bell peppers
    1 filet of salmon
    1 T lemon juice
    salt and pepper to taste

    I usually add seafood seasoning or lemon pepper also.

Directions

Take a piece of aluminum foil and add 1/2 filet of salmon. Add the veggies and seasonings. Wrap the foil into a pouch. Place on baking sheet and into 375 oven for about 30 minutes or until the fish is cooked to your taste.

I usually serve with a side of rice and salad.
