1 cup chopped onion
1 cup chopped green pepper
1 cup diced celery
1 cup chopped carrott
1 cup frozen corn kernels
1/2 (350 gm) block extra firm tofu, cubed
1 tbsp olive oil
7 tbsp (1/2 cup) chili powder
1.5 cups canned (drained) kidney beans
1 large (796ml) can (3.2 cups) canned diced tomatoes
Optional - cayenne pepper to taste
Using other 1/2 tbsp olive oil, saute onions, celery and green pepper in stock pot
Microwave carrots and frozen corn for 4 minutes, then add to pot with other vegetables.
Add tofu, diced tomatoes, kidney beans.
Stir in chili powder.
Cover and simmer for 1-2 hours.
Add cayenne pepper to taste.
Serve alone or over 1/2 cup brown rice.
Makes 8 - 1 cup servings
