Cheesy Veggie Soup

Introduction

This is great by itself (1 cup), over baked potato or over steamed broccoli. 1c=1 point for Weight Watchers. Great for an afternoon snack and under 100 cal! Ingredients

    1- 8oz low fat cream cheese
    2lb yellow crook neck squash, peeled, chunked
    2 large carrots, peeled, chunked
    6 cubes chicken bouillion
    4 cups water
    1 large onion, peeled, chunked

Directions

Makes 10 cups
Put all veggies in large pot, cover with the 4 c water, add the bouillion. Simmer until veggies are tender. Using 1/2 the broth at a time, run veggies through food processor/blender. Stir in all of the cream cheese. ENJOY!
