Soothing Chicken Soup

Number of Servings: 10

Ingredients

    1 lb chicken thighs, boneless & skinless (approximately 4 thighs)

    2 medium sized carrots, chopped

    2 medium sized celery stalks, chopped

    1 medium sized onion, chopped

    1T olive oil

    4C fat free chicken broth

    4C water

    2 bay leaves, dried

    2tsp salt

    1T black pepper

    2tsp season salt

    1tsp garlic powder

Directions

Makes 10 1-cup servings

Season both sides of chicken thighs with seasoned salt, black pepper, and garlic powder. In a large stockpot heat olive oil on med-high heat and saute thighs for approx 3-4 minutes on both sides. Then add in carrots, celery & onion and saute for an additional 5 minutes. Add chicken broth, water, salt and bay leaves. Bring to a boil and simmer for approximately 20 minutes. Remove chicken thighs and bring back up to a boil. When water is back to a boil add in noodles. Cook for 7-8 minutes until noodles are tender. While noodles are cooking chop chicken. Add chicken back into pot.
