Yogurt Pot Cake



Introduction

This is a plain cake simply made by using a yogurt pot for a measure. Therefore, where in the ingredients list the measurement is shown as e.g. 1 cup etc, this should be 1 yogurt pot. This cake can be something really different and exciting like a mango, pineapple or hazelnut cake according to the flavour of yogurt you use. You could also add e.g. cherry quarters, a scattering of tiny chocolate drops or nuts ~ but just a handful or so otherwise it will become too heavy. Ingredients

    1 Plain or Fruit flavoured 100g pot of Yogurt
    1 pot of granulated sugar
    1 pot of vegetable or corn oil
    2 medium size eggs
    3 pots of gluten free self raising flour
    OR (if you cannot obtain GF SR flour)
    2 pots of white rice flour
    1 pot of tapioca flour
    1 tsp baking powder
    2 tsp Xanthan Gum



Directions

Makes 1 large cake of 8-10 portions.
Preheat oven to 180c
Grease and line the base of a 7" round cake tin.
1) Pour the yogurt into a large basin and
2) add the sugar and oil and stir well.
3) beat the eggs and add to the mixture.
4) Add the flour one pot at a time and stir in gently.
5) Pour into the prepared tin and bake in the middle of the oven for 40-50 minutes or until a sharp knife pushed into the centre comes out clean.
6) Leave in the tin for 10 minutes then remove and leave to cool.
