One- Pot Chicken Tortilla Soup

Introduction

This incredibly easy one-pot meal is called Chicken Tortilla Soup, but the tortilla part is optional! I've figured the nutritional values of the soup alone without tortilla chips as a garnish. Ingredients

    2 cups shredded chicken
    1 16 oz. package stir-fry pepper and onions
    2 cloves garlic
    2 tbsp ground cumin
    1 28 oz can crushed tomatoes
    2-3 tbsp canned jalapenos
    3 14 oz cans reduced sodium vegetable broth
    1 11 oz can Mexicorn
    1 15 oz can black beans, drained and rinsed

    Optional garnish (these will add additional calories and fat): Tortilla chips, cheese, avacado

Directions

Cook chicken however you like, I usually just boil it in the same pot the soup will simmer in, then shred it. Cook frozen stir-fry mixture, garlic, and cumin in a non-stick soup pot until vegetables soften. Stir in the chicken and the rest of the ingredients and simmer for 30 minutes.
