Classic Split Pea Soup

Ingredients

    2 TBS. butter, unsalted
    2 cups onion, diced
    2 cups split peas
    1 cup carrots, diced
    2 cups celery, diced
    10 cups water
    1 clove garlic, minced
    1 1/2 TBS. parsley, dried
    1 tsp. (.15 TBS.) basil, dried
    1 small (.25 tsp.) bay leaf
    1 tsp. black pepper

Directions

Makes 5 two cup servings.

Melt butter in large soup pot over medium high heat. Add onions and cook until they start to change color.
Add water, peas, carrots, celery, and spices and mix.
Cover and bring to a boil for 10 minutes.
Reduce heat to medium and cook for 45 minutes, stirring occasionally.
Remove bay leaf and enjoy.
