Paula's Super Easy Chicken Breasts with Tomatoes

Introduction

You can't get much easier than this and the flavor is incredible! You can't get much easier than this and the flavor is incredible!
Number of Servings: 4

Ingredients

    4 boneless, skinless chicken breasts
    1 Tbsp extra virgin olive oil
    1 15oz can Del Monte Stewed Tomatoes
    I small can Black Olives
    1 small can mushroom pieces & stems
    1 Tbsp corn starch
    1/2 cup water
    Greek seasoning mix

Directions

1. Heat olive oil in large skillet
2. Sprinkle greek seasoning on both sides of chicken breasts
3. Brown chicken breasts in oil, turning to brown both sides
4. Pour tomatoes black olives & mushrooms over chicken breasts, sprinkle a dash more of greek seasoning
5. Cover, reduce heat and simmer for 20-25 minutes until cooked through
6. Mix corn starch and water, making sure there are no lumps. Add as much as needed to thicken sauce a little.
