Herbed Baked Goat Cheese

Ingredients

    * Melba Toast, 2.75 oz
    * Pepper, black, 1 tsp
    * Egg, fresh, 2 large
    * *Grey Poupon Dijon Mustard, 4 tsp
    * Thyme, fresh, 9 tsp
    * Fresh Chives, 3 tbsp chopped
    * honey goat cheese, trader joes, 31 oz

Directions

1. Grind melba toast in food processor. Mix in pepper. Put in shallow dish.
2. Combine egg, mustard in second bowl
3. Combine thyme and chives in third bowl
4. Cut cheese into 1 oz rounds
5. Dip cheese in herbs (press herbs in), then egg (let excess drip off), then crumbs. Place on cookie sheet.
6. Freeze for 30 minutes. After this step, cheese may be baked or wrapped tightly in plastic and frozen for up to 1 week.
7. Preheat oven to 475 deg. Cook cheese on upper most rack for 7-9 min (0-12 min if cheese is completely frozen).
8. Serve on a bed of greens (see accompanying recipe for recommended option).
