IntroductionIndividual, portion sized chicken meat loaf. Flavored with buffalo wing sauce and blue cheese.

2 lbs ground chicken breast
3 slices lite wheat bread, dried & processed to crumbs
1/2 cup oats
3 egg whites
2 tbsp Franks Red Hot Sauce
2/3 cup blue cheese crumbles (optional)
or 2-3 tbsp lite blue cheese salad dressing
1/4 cup chopped onions
1/4 cup finely shredded carrots
1/4 cup finely diced celery
Salt & Pepper to taste
Mix together all ingredients, (if mixture seems to dry, you may need to add a tiny bit of milk or water to moisten, as you mix)
Thoroughly mix and season with salt & pepper
Spoon equally into to muffin/loaf pan.
Bake for 25-30 minutes until toothpick inserted in center of one loaf comes out clean (or use meat thermometer)
