Black Bean Soup

Introduction

Delicious and thick soup for a cold day. Can easily be modified for spiciness, or made vegetarian if you leave out the ham. Delicious and thick soup for a cold day. Can easily be modified for spiciness, or made vegetarian if you leave out the ham.

Ingredients

    1 Tbls Olive Oil
    1 Large Onion, Diced
    1 Large Carrot Diced
    1 Celery Stalk, plus leafy greens, Diced
    1 Leek, Diced
    1/2 C Mushrooms
    2 Garlic Cloves, Diced
    1 Tbls Coriander
    1 Tbls Savory
    2 Cans Black Beans, rinshed
    1 Can Chopped Tomatoes, with liquid
    1 Serrano Pepper, diced
    1 Slice Ham, diced
    Lime

Directions

Heat Olive Oil in large saucepan. Add onions until soft, about 5 minutes. (Salt onions if desired). Add carrots, celery and leeks and cook 5 minutes. Add mushrooms and garlic and stir, cooking for a few more minutes, until mushrooms are brown. Add spices and stir. Add rinsed black beans, undrained chopped tomatoes, serrano pepper and ham and stir. Bring to a boil. Place on medium to low and simmer for one hour. Taste to adjust seasoning. Place batches in a blender* or use an emergance blender to thicken. Add lime, stir and serve.

*Be careful when placing in a blender. Don't fill too much, and always use the top. If you use too much when it is hot, it will spray out the top.
