Introduction

Ingredients

    1 Chicken Breast boneless skinless all fat removed

    1/2 cup Simply Orange 100% Orange Juice - Grove Made

    2 tbsp Extra Virgin Olive Oil,

    1/2 tsp Ginger, ground,

    1 tsp Oregano, ground,

    1/2 tsp Sage, ground,

    1 tsp Sea Salt,

    1 tsp Dill weed, dried,

    1/4 tsp Nutmeg, ground, .

    Onions, raw, 1 medium sliced thinly

    Carrots, raw, 1 cup, strips

    Garlic, 5 cloves

    1 cup baby spinach leaves fresh

    1/2 medium Green Peppers (bell peppers),

Directions

Place all ingredients into a glass baking pan. Preheat oven 300 degrees. Cover with lid or alluminum foil. Bake 1 hour, uncover and bake 10 more minutes at 400 degrees.

  • The meal was very good. The flavor of the salad did appear much stronger prior to cooking though, I wonder how the meal would have tasted without cooking the salad, and mixing the cooked meat with the veggies. - 8/28/10

  • This is a family favorite...even all 5 kids love it! I've made it multiple times and it is juicy and delicious every time! The ginger and orange juice mixed with the spices gives it it's own unique flavor that tastes like no other chicken recipe! - 2/14/09

  • This was just OK. I definitely felt like I was eating diet food, there was nothing creamy, rich or fake-sinfulness. The vegetables were good cooked. I added brown rice as a side. The chicken was moist but not very flavorful. The blend of spices was a bit bizarre to me. - 2/1/09

  • This recipe is not bad. I can't be to harsh a judge because I didn't follow the recipe completely. First, I doubled the recipe and marinaded the chicken in the spices, OJ, and garlic for a couple of hours before pouring it all in a pan and adding the vegatables. I also added broccoli. - 2/1/09

  • When I started to prepare the meal, I didn't know how to put the ingredients in the dish. I followed the order of the ingredient list. I ended up with a spice rub on the chicken. Next time, I would put the spinach on the bottom & maybe mix the liquid & spice. But it was delicious the 1st way too! - 1/28/09

  • Honestly, there were just waaaay too many flavors going on at once. The garlic and onion clash with everything, there is too much salt...I didn't taste any orange. It tasted okay, but I tried it using only the veggies (minus onion), chicken, juice, and just the dill and it was MUCH better. - 1/27/09

  • I tried to double the recipe but had difficulty with the spices so it did not turn out right and the spices were too strong even thuogh I did not fully double them ..Anyone else have luck with doubling the recipe? Thanks - 1/26/09

  • As promised, a very moist chicken with nice flavours. I loved the spinach in it but we found the onions did not enhance the flavour so next time I would leave them out (I love onions usually). Easy to prepare. Delicious cold as leftovers in sandwhiches. - 1/24/09

  • This was very tasty! I doubled the sauce and cooked 6 chicken breasts in it and it turned out great and the next day cooked some pasta and added it to the left overs and it was great yet again! Thanks for a tasty, healthy chicken entre! ;o) - 1/19/09
