Breaded Zucchini

Ingredients

    2 Zucchini sliced
    .5 cup of seasoned bread crumbs
    1 tablespoon of Reduced fat parmesan cheese
    1 egg white

    Salt and pepper to taste

Directions

Preheat oven to 450 F.

Slice zucchini into circles or sticks (sticks are less time-consuming).

Mix breadcrumbs, parmesan cheese, salt and pepper together in one bowl.

Dip zucchini in the egg white, next dip zucchini into breadcrumb mixture.

Spray baking sheet with non-stick cooking spray and place zucchini on sheet.

Bake for 15-20 minutes at 450 F.

  • I adjusted this to use low-fat sour cream instead of the egg whites, and crumbled croutons. I haven't had breaded zucchini in years, so this was a treat, without all the excess calories of deep-frying. - 8/3/10
