Ingredients

1/3 cup Carbquik (I sifted out the fat, then measured--tastes WAY better this way!)
2 tsp. equivalent of liquid sucralose
3/4 tsp. baking powder (I used Hains sodium free)
1 egg
2 Tbs. half & half (you can use cream)
1 Tbs. butter, melted
1/2 tsp. vanilla
Directions
Combine dry ingredients in a bowl. In a small bowl, whisk together wet ingredients; blend into the dry ingredients until almost smooth. Let rest 5 minutes. You may need to add more HnH or water if batter is too thick. Cook on buttered skillet.
