Tofu Scram

Introduction

This is a great alternative for those looking to get some soy into their food plan. It is also alkalizing for the ph levels in the blood and promotes energy. This recipe is sugar, wheat and flour free. This is a great alternative for those looking to get some soy into their food plan. It is also alkalizing for the ph levels in the blood and promotes energy. This recipe is sugar, wheat and flour free.
Number of Servings: 1

Ingredients

    Extra Firm Tofu, 8 oz (weighed) then mash
    Onions, raw, .25 cup, chopped
    Green bell peppers, .25 cup, chopped
    Garlic, .5 tsp (minced)
    Lime Juice, 1 wedge
    Olive Oil, 1 1tsp

    Seasonings:
    1/4 tsp. ground cumin
    1/4 tsp. ground thyme
    1/4 tsp. paprika
    1/4 tsp. tumeric

Directions

Heat oil in skillet over medium-high. Saute onions & peppers 3 minutes, until softened. Add garlic, saute 2 minutes more. Add spice blend and mix it up for 15 seconds or so. Add 1/4 cup water and deglaze the pan, scraping the bottom to get all the garlic and spices.

Add in the tofu and let cook for about 15 minutes, stirring occasionally and adding splashes of water if necesary to keep it from sticking too much. Lower the heat a bit if you find that it is sticking. Add lime juice.

(Tip: I mix it in with 1/2 cup of corn grits and make a Tofu Scram bowl To kick it up a notch, you can add some soy bacon bits (health food store) and even some soy cheese. You don't need a lot of the extra fixins because the flaver goes a long way)
