Introduction

I love to eat pasta, and I can go over on calories with it too easily. I made this sauce the spread the calories thin while having a huge serving of pasta!! You will be stuffed after this one but not break the calorie bank! And yes, this is ONE serving! I love to eat pasta, and I can go over on calories with it too easily. Number of Servings: 1

Ingredients

    1 med zucchini**
    5 large button mushrooms**
    1/2 cup spaghetti sauce
    1/4 tsp garlic powder
    1/4 tsp ground pepper
    1/2 tsp italian seasoning
    1oz whole wheat penne
    1 Tbsp shredded parmesan cheese

    **Use any combo of veggies that you like. I make my hubbies with red bell peppers & zucchini because he doesn't like mushrooms.

Directions

Cook Pasta according to directions.
While it is cooking dice zucchini and mushrooms into small pieces. Cook over med heat until veggies are tender, about 5 minutes. Do not drain just add sauce, garlic, pepper, and seasonings to veggies, let simmer remainder of time until pasta is done.
Drain pasta & toss with sauce, top with Parmesan.
Delicious!!
