Introduction

Ingredients

    Onions, raw, 1 medium sliced
    1 red pepper, sliced
    1 small aubergine, chopped (chunky)
    Courgette 1 small-medium (chunky)
    Tomato Puree, aprox 2 tbsp
    1 tin chopped tomatoes in juice
    1 red chilli sliced
    Chicken Breast, no skin, 1.5 breast, bone and skin removed
    Cheddar Cheese, 2 slice (1 oz)
    Parmesan Cheese, grated, 0.5 tbsp
    Plain flour, enough to coat the aubergine and courgette.
    Extra Virgin Olive Oil, 1 tbsp
    wild rocket, 3 good handfulls

Directions

Prepare the vegetables and dice the chicken. coat the aubergine and courgette lightly in the flour and stir fry in the oil until golden browned on all sides. Remove from the pan and drain on kitchen paper. Stir fry the chicken, onions, pepper and chilli until the chicken is cooked. Add the tomato puree, tinned tomatoes, a little water to the pan and then return the aubergine and courgette to the mixture. heat through for a few minutes, stir in the rocket, and turn out into an oven proof dish. Sprinkle over the cheddar then the parmesan and put into the oven for about 15 mins, or until the cheese bubbles.
