Vegan Banapple Muffins

Introduction

These are my favorite, and I'm not even vegan! They're great if you're like me and have a sweet tooth. They have a very interesting gummy texture and are best hot out of the oven. Almost no fat, good fiber and protein. These are my favorite, and I'm not even vegan! They're great if you're like me and have a sweet tooth. Number of Servings: 8

Ingredients

    1 cup white all-purpose flour
    1 cup white whole wheat flour
    2 tsp baking powder
    2 tsp baking soda
    1/2 tsp cinnamon
    1/2 cup sugar
    1 1/2 cups apple juice or 3/4 cup apple juice concentrate and 3/4 cup water
    1 large apple, shredded
    2 ripe bananas, mashed

Directions

1.) Preheat oven to 325 degrees F, spray muffin pan.

2.) Mix dry ingredients in one bowl, wet ingredients (+bannana) in another, combine and fold in apple.

Fill muffin cups 2/3 full.

Bake for 30-40 minutes, but this depends on your oven so keep an eye on them after 30 minutes. Yum!
