My Best Chicken Parmesan

Ingredients

    2 large egg yolks
    4 (4oz) chicken breasts
    1 cup of Ragu Traditional Sauce
    16 seasoned, fat free croutons crushed (the calorie calculation actually has regular croutons so you are definitely safe either way)
    1 Tbsp Italian Herb Seasoning Mix
    1 Tbsp Garlic Salt
    8 tsp Kraft Parmesan Cheese,
    1 Tbsp olive oil
    1 oz of shredded mozzarella chese
    2 (.75oz) slices of provolone cheese

Directions

Preheat a 350degree oven and spray a baking dish with cooking spray and then coat the bottom of the dish with 1/2 cup of the spaghetti sauce.

In 2 seaparte bowls or dishes (I use pie tins)
1) 2 egg yolks beaten just until mixed, use for dredging the chicken
2) crush croutons until almost a breadcrumb consistency, add 4 tsp of the parmesan cheese, the italian herbs, and the garlic salt. I also add dried minced onions as well but could not find it in the list to add it to the ingredients. Mix well.

Dredge the chicken breasts in the egg yolk and then coat the chicken breast with the crushed croutons mixture lightly to allow each breast to be coated (the last breast may be only lightly breaded if you are not careful, you can always add croutons .

Place them in a frying pan heated at med-high heat with 1 Tbsp of olive oil. Brown them for about 5 min on each side. Then place them in the spaghetti-sauce coated baking dish. Put the additional sauce on top of the breasts but just about a oversized tablespoon full per breast.

Then tear the provolone slices in half and place a slice on each of the breasts. Then sprinkle the mozzarella cheese on top of that and then the remaining 4 tsp you can sprinkle on top of that as well. Place the dish in a 375 degree oven for 20min if these are fairly thin breasts or for very thich breasts you can adjust the time to 350 degrees for 30-35 min.
