Ingredients

2c cooked rotisserie chicken shredded
4oz can of diced green chilies
3/4c red salsa
1/2c enchilada sauce
4 - 8inch flour tortillas
cheddar cheese shredded
light sour cream
cilantro
Directions
makes 4 servings
heat oven to 350
To shred chicken its best to use fingers and do it when chicken is warm and just brought back from grocery. Also make sure to take off the skin and throw away. Thats where most of the fat is.
in nonstick pan combine chicken, salsa, and green chilies. Mix until heated through.
heat tortillas in microwave for 30sec by rolling them up in a paper towel all together.
spoon 1/4 of the chicken mixture on tortilla
and roll up(sides in first then over the top).
place of greased baking sheet and lightly rub with oil
bake until starting to get browned, 15-20min
warm enchilada sauce
spoon warm enchiliada sauce on a plate, place baked chimichito on top, add a spoonful of sour cream and sprinkle with cheese and cilantro.
