Number of Servings: 10

Ingredients

    2 cans red kidney beans (or 1 can of kidney beans and 1 can of black beans)
    1 lb browned and drained 93% ground beef
    1-2 cups chopped onions (to your tastes)
    1 large green pepper, chopped
    2 stalks celery, chopped
    1 can no-salt added canned corn
    3 cans diced no-salt added tomatoes
    1 6 oz. can tomato paste
    2 whole bay leaves (remove before serving)
    2 tsp black pepper
    1 Tblsp cumin

Directions

Makes 10 ample servngs


Spray large crockpot with no-stick cooking spray.
Brown ground beef. Drain.
Put cooked ground beef and all remaining ingredients in crockpot.
Cook on hi for 5 hours or on lo for 7 hours.

Delicious served with a dollop of light sour cream or a tablespoon of low fat cheddar cheese; corn bread is a nice side dish.
