Quick Italian Pasta Salad (Gluten Free)

Introduction

Number of Servings: 6

Ingredients

    12 oz spiraled rice pasta (I use Mrs. Leeper's)
    2 cans diced tomatoes, drained
    1/3 cup black olives, halved
    1/4 c seasoned rice vinegar
    1/4 c fresh basil, chopped
    2 tbsp olive oil
    1/2 tsp salt
    1/2 tsp pepper
    1 clove garlic, minced
    1 cup feta

Directions

Cook the pasta.
While pasta cooks, cut olives in half.
Next, mix /shake together vinegar, olive oil, basil, salt and pepper, and minced garlic clove.
When pasta is done, sprinkle tomatoes, olives and feta over slightly cooled pasta. Drizzle dressing over and toss, then refrigerate for 1-2 hrs, until cool (opt).
