Oatmeal Breakfast Cookie

Introduction

A cookie healthy enough for breakfast? You decide but for me this is a winner!! Who wouldn't eat a cookie for breakfast? :) A cookie healthy enough for breakfast? You decide but for me this is a winner!! Who wouldn't eat a cookie for breakfast? :)
Number of Servings: 54

Ingredients

    1 cup unsweetened apple sauce
    1/2 cup light brown sugar
    1/2 cup granulated sugar
    2 large eggs
    1 1/2 cup flour
    1 tsp baking soda
    1 tsp ground cinnamon
    1 tsp almond extract
    salt
    3 cups oats (uncooked)
    1 cup chopped dried apricots
    3/4 cup dried cranberries
    3/4 cup unsweetened flaked coconut
    3/4 cup slivered almonds

Directions

Preheat oven to 350. Mix ingredients in bowl. Drop 1 TB of dough 2 inches apart onto cookie sheets. Bake 15 minutes until golden.

Makes 4 1/2 dozen cookies.
