Ingredients

    • 2 potatoes
    • ½ pound breakfast sausage
    • 6 eggs well beaten
    • 1/2 tbsp vegetable oil

Directions

Dice potatoes into small pieces. Add vegetable oil to skillet over low heat. Add potatoes and cook until fork tender and golden brown. Drain excess vegetable oil, add sausage and cook until done. Add eggs. Cook until they are to your liking.
