Chicken Pot Pie

    3 cups diced chicken
    1 onion
    3 stalks celery
    2 or 3 cloves garlic
    6 cups chicken broth
    5 tbsp flour
    2 or 3 tbsp olive oil
    1 package frozen veggies
    1 large potato diced (optional
    1 can Pillsbury Grands biscuits (or make your own, use any kind you like)

Dice onion, celery and garlic, saute in olive oil til translucent, add chicken and saute for a couple of minutes. Add flour and cook until flour just begins to brown a bit. Add chicken broth and vegetables. Bring to boil, then simmer at low boil until sauce is thickened and potatoes are just tender.

Place in large casserole or 13 x 9 inch pan. Place biscuits on top. Bake in 350 oven until biscuits are browned on top and sauce is bubbly, about 20 - 25 minutes.
