Lemon Thyme Stuffed Catfish

Number of Servings: 6

Ingredients

    4 Slices Oat and Honey Bread, cut into small cubes
    5 Medium sized Green Olives, chopped
    1 tsp. each Salt and Pepper
    2 tsp. Dried Thyme
    1/4 tsp each Garlic and Onion Powder
    1 tsp. Celery Seed (or chopped celery leaves)
    3 T. Lemon Juice
    2 lbs Catfish (3 filets)

Directions

Put all ingredients, except Fish, in small bowl. Mix to combine thoroughly (I like to use my hands to make sure it is moist all the way through). Lay out filets and divide stuffing evenly on each. Spread out the stuffing and roll each filet. Hold ends in place with toothpick (optional) and lay seam side down in loaf pan. Bake on 350 degrees for 15-20 minutes. Let stand 5 minutes. Serve with favorite vegetables!
