Green Chile Cheese Soup

Introduction

Cheese based mexican green chile soup. Rich and excellent with crushed blue corn tortilla chips added to your bowl of soup. Very filling and packed with flavor. Even my kids gobble up this soup! Number of Servings: 10

Ingredients

    1 lb low fat Velveeta cheese
    1 can chicken broth
    1/2 cup flour
    1 med. onion
    2 Tbsp butter
    1 can Healthy Request Cream Mushroom Soup
    8 cups whole milk
    1 can chopped green chiles
    1 Tbsp Cilantro (optional)

Directions

Makes 10 - 1 cup portions
Sautee onions in butter. Meanwhile, wisk together flour and chicken broth. Add to onions for thickening soup. Add milk and cook until heated through. Cut cheese into large slices and add to pot. Stir until melted. Add cream of mushroom and soup, chiles and cilantro. Serve warm with crushed tortillas (optional). Be very careful not to boil this soup. It also freezes very well for later enjoyment.
