Ruth's Broccoli Salad

Number of Servings: 4

Ingredients

    2 tablespoons Vegenaise
    2 teaspoons honey
    1 teaspoon yellow mustard
    1-1/2 cup chopped broccoli (about 1 stalk)
    1/2 cup grated carrot (about 1 carrot)
    2 tablespoons chopped onion
    1 medium apple, cut into bite size chunks
    Cashews (optional - for garnish)

Directions

In a salad bowl, mix the vegenaise, honey, and mustard. Then add in all the chopped vegetables and apple. Makes about 3 cups total. Serving size is 3/4 cup. If desired, garnish each serving with cashews, but count them separately. Cashews are not included in the nutrition information.

    Vegenaise is the best tasting egg-free, dairy-free mayonnaise substitute I've found. You may substitute any mayo type dressing. You can find Vegenaise in the refrigerated sections of health food stores.
