Tuna-rice stuffed peppers

Number of Servings: 4

Ingredients

    2 Green Peppers, halved lengthwise
    2 cups White Rice, cooked
    .5 cup Celery minced
    5 oz. can Starkist Chunk White Albacore in Water, drained
    .25 cup Onions, chopped
    1 clove *Garlic, minced
    .5 cup 2% Milkfat, Cottage Cheese,
    1 oz Parmesan Cheese, grated
    Lemon Pepper to taste

Directions

Preheat oven to 350 degrees. Cook rice according to package directions. Halve and clean green pepper. In small bowl mix tuna, rice, celery, onions, garlic and cottage cheese. Add lemon pepper to taste, mix well. Stuff peppers, place in an oven proof baking dish and bake for about 40 minutes, until peppers are soft and filling is hot. Sprinkle Parmesan cheese over pepper halves and return to oven for ten minutes. Stuffing that won't fit in the peppers makes a nice tuna salad sandwich for next day lunch!
