2 tsp olive oil
2 garlic cloves, minced
2 cups thin sliced zucchini
16 oz bag frozen mixed vegetables, defrosted
2 cans diced tomatoes, with juice
salt & pepper to taste
1/2 lb small pasta (ditalini, elbow)
grated parmesan cheese
4 oz part skim mozzerella cheese
Meanwhile, cook pasta.
Place pasta in bowl and top with vegetable mixture. Add cheeses.
