1 potato large ,cooked in microwave until done
1/4 cup Italian dressing and marinade
1 pound lean ground beef
1 onion chopped
1 cup frozen whole kernel corn
1 tomato chopped
1/3 cup Kraft 2% milk Mexican cheese blend
in a skillet on the stove heat dressing and add meat and onion cook and stir until meat is browned. Add corn and tomato .
Spray bottom of a casserole dish, add drained potato and flatten (mash) on the bottom with a dish or glass. Add meat mixture and then top with 1/3 cup cheese. Cover and cook in a 400 degree oven for 20 minutes, uncover for the last 10 minutes or until brown. Add Salt and Pepper at the table to taste.
Servings: 4. I marked out 4 quarters and served. Its about 1 cup serving spoon.
