Black Bean & Rice Salad

Introduction

Nice cold salad with simple meat or fish meal Nice cold salad with simple meat or fish meal
Number of Servings: 4

Ingredients

    1 1/2 cups cooked brown rice, yeild from 1/2 cup raw
    2 cups black beans, cooked, rinsed and drained
    1/2 cup chopped onion
    2 cloves garlic, minced or pressed
    juice from 1 lime
    2 Tablespoons olive oil
    1 Tablespoon dried cilantro, or use more if fresh is available
    1 teaspoon salt
    1/2 teaspoon black pepper

Directions

Prepare rice and black beans ahead of time and let cool. Canned beans may also be used but drain and rinse well.

Add all ingredients to bowl and toss. Let sit until flavors blend. Also good leftover Serves4
