Crustless Spinach Quiche

Ingredients

    1 pkg frozen spinach, thawed and squeezed dry
    1 cup egg substitute
    1/2 cup FF cheddar cheese
    1/2 c FF milk
    1/2 cu[ fresh mushrooms, diced
    salt and pepper

Directions

combine all ingredients,pour into 10 inch pie plate sprayed with nonstick spray. cook at 350 for 45 minutes or until knife inserted in center is clean

  • Really easy and delicious ! I used onions, green peppers and carrots instead of spinach. I also added choppedup fat free hot dogs (I know it sounds weird, but it was good).

  • This is great for a filling, low-calorie breakfast. I mean if you cut out a 200 calorie serving for yourself it's a LOT of food! - 1/22/09

  • OH! Even though I've not made this yet, I am going to rate it very good, since it is almost zero in fat grams. I will make it this weekend, since I need to get some mushrooms. I'll probably add a litte nutmeg and onions to it. - 1/15/09
