Raisin Bran Muffins

Ingredients

    1 Tbsp lemon juice
    1 cup skim milk
    1 1/2 cups raisin bran cereal
    1/2 cup sugar
    1 1/4 cups whole wheat flour
    1 1/4 tsp baking soda
    1/2 tsp salt
    1 large egg
    1/4 cup canola oil

Directions

Preheat oven to 400 degrees. Add lemon juice to milk and let stand for 10 minutes. Mix cereal, sugar, flour, soda and salt in a bowl. Add egg, milk and oil; stir just until dry ingredients are moistened. Arrange paper liners in muffin tins. Fill cups 2/3 full. Bake 15-20. Makes 12 muffins.
