Ground Turkey Potato Casserole

Ingredients

    1 pound lean ground turkey
    1 medium onion(s)
    1 medium bell pepper(s)
    1/2 tsp table salt
    1/4 tsp black pepper
    8 oz canned mushrooms
    10 3/4 oz Campbell's 98% Fat-Free Cream Of Mushroom Soup
    6 medium potatoes
    Poultry Seasoning
    Sage
    Rosemary
    Basil



Directions

Peel and slice 6 potatoes.
Saute onions and peppers in butter flavored cooking spray. Add turkey and cook through.
Place potatoes and turkey with onions and peppers in a baking dish. Add remaining ingredients. Seasonings are to taste.
Bake for 30 minutes or until potatoes are soft.

    I liked the convenience of this recipe. "Fried" out the meat in the cast iron skillet then baked it according to directions all in one pan! I did add red peppers for color, 2 big cloves of chopped garlic, and 4 stalks of chopped celery for some crunch. I would make this again. - 9/6/08

    The only change I made was to parboil my potato slices to get rid of some starch.Since the other ingredients are pre cooked,heating through is all the cooking necessary.I did add a sprinkle of Emeril"s Trukey Rub that I use with most poultry products.30 min cooking time and goble,goble....Chef Jim - 5/31/08

    I gave it only 4 stars because I had to modify the recipe a bit. I felt that there wouldn't be enough liquid to cook the potatoes, so added some water to the soup, and cooked it at 400 with the pan covered in foil. I also used 3 different kinds of peppers & my own seasoning. Very good! - 1/29/08

    This was wonderful! I am glad I read the other comments though. I added Mrs. Dash garlic and herb seasoning, garlic, and sliced and boiled the potatoes first. I baked it at 400 degrees F for 30 min. It was perfect. - 10/22/10

    This one gets an extra thumbs up! First- hubs doesn't like ground turky and 2nd he hates casserole-type dinners. He LIKED this! I seasoned the turkey with Mrs Dash Garlic and Herb seasoning, but that was the only alteration I made. Thanks! - 8/2/10

    Awesome! I used frresh mushrooms instead of canned (5 oz. fresh) and added garlic powder. I was worried about the potatoes so I cooked them all the way in the microwave and diced them up. I cooked it covered in foil for 15m at 375. Even my boyfriend loved it! - 1/25/10

    I think it's a good idea if you pre-cook the potatos, but not to where they are OVER done. Just till slighly crunchy. I find that the potatos don't cook very well in 30 minutes and my family complains. I also add some frozen corn and carrots and my own seasoning. It's WONDERFUL!!!! - 10/22/10

    Yummy and filling! I also added minced garlic, parmesan cheese and used like 10 small red potatoes instead. I used 2 cans of mushroom soup (I'm a creamy girl) and added some milk. Topped with low fat shredded mozzerella. - 2/10/10

    This looks like this can also be altered to use a spicy tomato soup as opposed to the mushroom, and replace the potatoes with whole wheat penne, spaghetti or any pasta.

    I parboiled skin on potatoes and carrots ,Added little garlic and spike to the meat mixture. Microwaved the soup with 1/2 cup milk and mixed it into the casserole.
    Added shredded colby cheese on top. Melted it under the broiler. Doing the above decreased the oven time to about 15 to 20 min. YUM. - 2/26/08

    I definitely would not make this again. It was bland, took almost 2 hours to cook at 350 (not 30 minutes) and did not have the consistency of a "casserole." - 10/14/07

  • It was very filling. I used two different kinds of potatoes sliced them thin and soaked them in water to get rid of some starch and then par-boiled them, and added green pepper, fresh mushrooms, peas, , and onion. I layered the meat and potatoes and added a little cheddar on top. Perfect! - 3/7/12

  • Would make it again...was a bit blah. Would try with cream of celery soup and other spices. Took longer than 30 minutes and my potatoes were sliced quite thin. Would parboil or nuke potatoes first. I would also mix the soup with water or milk to make more of a broth/sauce. - 7/16/11

  • As one cook suggested I parboiled the potatoes, but I only used three potatoes and added one cup of broccoli and one cup of cauliflower with one tablespoon of fresh sage and two cloves of garlic. Sprinkling the top with one tablespoon of grated parmesan before serving gave it some zest. - 1/17/11

  • I used ground chicken instead of turkey, and two cans of mushroom soup. Fresh portobellos instead of canned, and I mixed everything up before baking. I also parboiled the potatoes and baked everything together on 350 for 30 minutes. It was a BIT bland.. next time I make it I will spice it up a bit. - 10/24/10

  • My only changes were leaving on the potato skins and boiling them about ten minutes before hand. Very good simple recipe. Ignore the people saying the carbs are too high. We all aren't watching carbs you know, I don't post on low carb recipes saying the fat's too high. Again, good recipe. - 4/24/10

  • I was trying to come up for something for dinner with things I had on hand.I used 2 cans of soup. I had a can of small peeled potatoes. I sliced them up added some spices and some parmesan cheese baked for 30 min. Was quick and easy - 3/21/10

    Gross. It was bland and heavy. Had I not boiled the potatoes ahead of time, they would not have cooked according to the original directions. There was no way to save this dish with seasonings of any kind. - 2/6/10

  • We really liked this. My hubby said feel free to have this about every two weeks! I diced the potatoes & steamed them in the microwave for 6 minutes before mixing them in, then baked the casserole for 30 min. at 350 topped with foil. I also added a little steak seasoning. Yum!   • You need to cook the potatoes 1st for @least 10 minutes. I also would recommend a 3 quart @ 375. I did eat even a serving cause most of the potatoes were raw. I cooked it 20 more min. so all the potatoes are cooked. - 1/13/10

  • took over an hour for the potatoes to get done and that was with covering it with foil.. I recommend not using all the potatoes and adding fat free cheddar cheese for more flavor. - 8/1/08

  • This was good but kind of bland. I parboiled the potatoes and then baked it for 40 minutes. I didn't actually use 6 potatoes but 2 big potatoes that weighed about 1 pound each. That was plenty of potato. - 6/23/08

    The canned soup probably contains all kinds of artificial additives. However, the general idea is good. Squash or turnips would work instead of potatoes. - 5/31/08
