Creamy Feta-Spinach Dip



Introduction

We've updated the classic spinach dip by adding tangy feta and
omitting the artichokes and much of the fat.

Ingredients

    INGREDIENTS FOR 8 SERVINGS:
    1 (8-ounce) carton plain low-fat yogurt
    3/4 cup (3 ounces) crumbled feta cheese
    1/4 cup (2 ounces) 1/3-less-fat cream cheese, softened
    1/4 cup low-fat sour cream
    1 garlic clove, crushed
    1-1/2 cups finely chopped spinach
    1 tablespoon minced fresh or 1 teaspoon dried dill
    1/8 teaspoon black pepper
    Fresh Dill (optional)

Directions

1. Spoon yogurt onto several layers of heavy-duty paper towels;
spread to 1/2-inch thickness. Cover with additional paper towels, and
let stand 5 minutes. Scrape into the bowl of a food processor using a
rubber spatula. Add the cheeses, sour cream, and garlic, and process
until smooth, scraping sides of bowl once. Spoon yogurt mixture into
a medium bowl, and stir in the spinach, minced dill, and pepper.
Cover and chill. Garnish with fresh dill, if desired. Yield: 2 cups
(serving size: 1/4 cup).

    DANIOWENS ask Why do you spread yogurt on paper towel?..........You want the yogurt cheese and not the liquid....it is to drain it..... - 6/14/08

    This is wonderful, but I used the recipe here on spark for YOGURT CHEESE, which is just straining the yogurt the day or so before through a cheesecloth or strainer - much easier than the papertowel thing! Thanks for a healthy spinach dip!!! - 6/14/08

    This was a HUGE hit! I used frozen spinach (about 2 packs) and just cooked it up and let it drain/cool. I also used more garlic and lowfat feta. It was SO GOOD. I didn't have a food processor so a hand mixer did the job just fine. LOVED IT and so did everyone else! - 3/26/08

    This is definitely a dip, and I was just looking for another way to add more spinach to my diet. I think it would be fantastic with carrots or raw cauliflower and broccoli for dipping. I added a little Pick A Peppa for some zip, though. I'd also leave some of the spinach as whole leaves. - 7/15/08

  • YUMMMM. I was looking for a healthier alternative to spinach dip for Christmas Eve and I found this. I JUST got finished making it. YUM! I added a bit more spinach than it calls for and more garlic. I used a whole pack of the Dole baby spinach leaves. I hope everyone likes it tomorrow! - 12/23/07
