IntroductionQuick and easy, but oh so tasty! Quick and easy, but oh so tasty!
2 slices of back bacon, chopped into pieces
1 cup of mushroom pieces/slices
1 tsp olive oil (or spray oil for less calories)
2 tbs Low fat Greek yoghurt (brought to room temperture or heated for 20 seconds in the microwave)
Add the Greek yoghurt to the pan and stir until combined. If the pan is too hot then the yoghurt will split (it still tastes good though, but doesn't look as nice).
Serve the mixture on toasted granary or seeded bread, with salad leaves or as a filling for a jacket potato. Sprinkle with black pepper to finish.
The combination of salty bacon, mushroom and the creamy, sourness of the yoghurt make a great 'Stroganoff'
