1 lb. chicken breast (note: you can add any kind of meat or seafood to this) 1 can diced tomatoes (can be seasoned) 1 clove garlic, minced 3 cups Brown Rice 1 cup fresh peas 1 green and red bell pepper 1 cup chicken broth 1 tbsp parsley Salt and Pepper to taste 1/3 cup olive oil
In heavy skillet, saute chicken that has been cut into bite-size pieces in olive oil until lightly browned. Take out chicken and set aside (keep warm). Add onion and peppers to cook until soft. Add garlic, tomatoes, parsley, rice (uncooked). Bring to a boil and add chicken broth. Let simmer for 20 minutes or until rice is tender. Add chicken and peas for remaining 5 minutes and serve.
