Introduction

great for manicotti or sloppy joes or base for sauces great for manicotti or sloppy joes or base for sauces
Number of Servings: 6

Ingredients

    1 unpeeled eggplant, chopped into small cubes
    1 cup chopped onions
    1 cup chopped bell pepper
    1 cup shredded carrots
    1 stalk celery (large)
    1 cup chopped mushrooms
    3 cloves chopped garlic
    2 Tbsp olive oil
    1 10oz package frozen spinach(chopped and thawed)
    1 6oz can tomato paste
    6 oz water
    6Tbsp A1 sauce or BBQ sauce
    dash black pepper
    dash salt



Directions

saute onions, celery and carrots for 3 minutes in olive oil on med.. Add rest of chopped veggies and saute 5 minutes. add other ingredients and simmer for 10 minutes. Stir occasionally. you may serve on buns or mix with any cheese and stuff manicotti, or use as a base for other sauces.
makes six, 1- cup servings.
