Hamburger Noodle Casserole

Ingredients

    5 c egg noodles
    1 lb ground beef (93%)
    2 cloves garlic
    3 cans tomato sauce
    1/2 t sugar
    1 pkg low fat cream cheese
    1 c part-skim ricotta
    1/4 c light sour cream
    3 scallions, sliced
    2/3 c cheddar

Directions

Cook noodles. Brown beef and garlic. Stir in tomato sauce and sugar. Add noodles. Beat cream cheese, ricotta and sour cream until well blended. Stir in 1/2 onions. Spoon in half of noodle mix into 13/9 pan. Top with cheese mixture, then remaining noodles. Bake at 350 for 30 minutes. Top with cheddar and remaining onions, heat until melted. Serves 10-12.

  • This is delicious! The cream cheese tempted me to lick my plate! Made it in two 8x8 dishes and froze one for a busy night. I may sub marinara for the plain tomato sauce next time, but it is great either way. - 1/12/14

  • I left out the ricotta & sugar--used cottage cheese instead. Also, when I cooked up the hamburger, I added a shredded carrot, 1 chopped onion, chopped kale & cabbage, plus chopped sweet pepper. -- When I make a casserole I LOAD in veggies & the family gets the benefit! - 3/8/13
