Introduction

Celebrate spinach season with this lean and green scramble. Salty feta and velvety eggs combine beautifully with wilted spinach for a filling breakfast that's high in protein. Celebrate spinach season with this lean and green scramble. Salty feta and velvety eggs combine beautifully with wilted spinach for a filling breakfast that's high in protein.

Ingredients

    3 egg whites
    2 cups Fresh Express Baby Spinach
    1 1 Italian tomato, chopped (any tomato)
    1/4 c. chopped onion
    1/4 c crumbled feta cheese
    salt & pepper to taste

Directions

Chop onion & tomato. Spray pan with cooking spray and put on medium heat. Cook onions until translucent.

Add 3 egg whites, tomato, spinach and cook until cooked through.

Just before you are ready to take off heat, take 1/2 of the feta cheese and throw in pan and melt.

Top with remaining crumbled cheese and salt and pepper to taste.

    I've been making this for over a year after having it at a restaurant. they called it 'Greek scrambled eggs' and it so rocks!
    I like to add olives (or garlic stuffed olives) into the mix, and red onion sliced into rings.

    I used 2 egg whites and one yolk, handful of spinach and reduced fat Tomato Basil Feta Cheese. It was simply delicious. I've never added feta to eggs before and was very impressed with the flavor. - 1/11/08

    Delicious. I had a few mushrooms that I threw in. Also, I didn't have enough cheese but it was still good. I also added a pinch of garlic salt and a dash of pepper. The kids loved it as well. - 11/23/08

    I hadn't even seen this recipe - and I already make it EVERYDAY for breakfast! I go without the onion, and I keep the tomato cold, having a mix of cold and hot is different and rather nice! Like fruit in oatmeal. - 3/20/09

    Consistently good. I've made this a few times. I use EggBeaters and reduced fat feta. Once I used sun-dried tomatoes instead of fresh. That was good, too. - 3/18/09
