Chicken Gnocchi Soup

Introduction

Had this soup at Olive Garden and loved it. This is my version of how to make it since I couldn't find the recipe. Had this soup at Olive Garden and loved it. This is my version of how to make it since I couldn't find the recipe.
Number of Servings: 8

Ingredients

    1/3 c olive oil
    2 tsp minced garlic
    3 lbs chicken breast cubed ( I usually buy the bag of breasts from WalMart and cut off the excess fat)
    1/3 cup flour
    1/2 cup shredded carrots
    bag of baby spinach or if using adult spinach coarsely chop removing some of the tougher stems(make sure to wash again to remove all dirt residue)
    pint of heavy cream
    2 McCormick's chicken boullion cubes
    package of De Cecco potato gnocchi (only kind available where I live)
    salt and pepper as needed

Directions

On medium heat in large stock pot. Sautee carrots and garlic.

Place chicken and flour into the pot and stir until flour is absorbed into the chicken and juices.

Add chicken broth and boullion cubes.

Let simmer, until chicken is done. Add heavy cream, spinach and gnocchi. Cook until gnocchi is done. About 10 minutes. Checking to make sure heavy cream does not scorch. Soup will thicken.
