Number of Servings: 4


    1 pound beef tenderloin, cubed
    1 green onion, diced
    2 minced garlic cloves
    1/2 tsp salt
    1/4 tsp pepper
    1 TBS vegetable oil
    1 pound fresh asparagus, trimmed adn cut into 2-inch pieces
    2 Tbs. butter
    1-1/2 tsp lemon juice
    hot cooked brown rice


In a Wok stir-fry beef, onion, garlic, salt and pepper in oil for 3-5 min; remove and keep warm. In the same pan, sitr-fry the asparagus in butter until it's tender. Return beef mixture to the pan. Stir in soy sauce and lemon juice; heat through. Sever over brown rice.
Serving size is 1-1/4 cups

  • Pretty good. I like the lemon flavour in it. I didn't use butter but just olive oil. I just wanted to let you know you say to put soy sauce on in the instructions, but don't have it in the ingredient list. - 3/7/09
