Kim's Lime Basil Egg Salad

Introduction

I use only organic, free-range eggs for my egg salad. The lime basil gives this salad an extra fresh taste! I use only organic, free-range eggs for my egg salad. The lime basil gives this salad an extra fresh taste!
Number of Servings: 4

Ingredients

    4 large hard boiled eggs
    4 tsp dijon mustard
    3 tbsp light mayonnaise
    1 tbsp basil [lime basil if available]
    1/2 tsp salt

Directions

Mix together until well blended and refrigerate for at least 2 hours to let basil really shine in this one!
Serving suggestion: In a sandwich with thinly sliced cucumbers - yummy!
Makes four servings.
