1 tablespoon olive oil
4 large cloves garlic, chopped
1 32 oz can diced tomatoes
1 15 oz can black beans, rinsed and drained
1 15 ozcan pinto or kidney beans, rinsed and drained.
2 tablespoons chili powder
1 Tablespoon ground cumin
1-2 teaspoons red wine vinegar
Salt & Pepper to taste
1.5 cups low-fat cheddar cheese
Cover, reduce the heat to low and simmer for another 30-60 minutes for texture and flavor. Season with the vinegar, salt and pepper. Top with shredded low-fat cheddar cheese.
